[HELP] What dose the signal wire do on a servo

Hello im a noob a servos and i have a store brand (meaning have no controller) so i was wandering if i could basically not use the signal wire for it.
basically i want to change the steering moter (which gets stuck so dosn't even out) out with a servo, but i have no clue what the signal wire dose. So what dose the signal wire do?

so what would i have to do? Maybe add a controller some how?
